You are reading past the end of Adam's quote. Adam made the statement about "flesh of my flesh" and named the new creation "woman". That's the end of his quote. The rest is said by the same first person omniscient voice that narrates all of Genesis. Thus, "For this reason a man will leave his father and mother and be united to his wife, and they will become one flesh.", is not said by Adam at all.
