I believe what you are going through is a natural progression. We go from believing what our parents believe and what we were taught to questioning everything until we have come up with our own view that is truly our own and not that of our parents. I think that's a good thing; it's good for us to have our own beliefs and not to just blindly share the beliefs of those who raised us.

As for your first statement about articulating who God is, I partly agree with you. We obviously need to understand something about God's character, about how he interacts with our world, and what he expects from us. But beyond that, any god that can be fully explained and understood using human thought and language is not big enough. It seems to me that it makes little sense for us to expect the creation to fully understand the creator.
