You look for proof that the bible is the infalible word of god, and as such the proof would have to come from some source other than the bible itself. Ultimately it is impossible to do, that is why it is called FAITH.

Even if one accepts that the works of the bible were divinely inspired, one does have to question if A) all of the different books are equally divinely inspired, and B) if there were not other books that were equally divinely inspired which were kept out of the bible. For example, the Orthodox bible does not include the book of Revalation, and Martin Luther seriously considered not including it in his origional translation. He did however find it politically useful to do so, since it was in his interest to paint the pope as the antichrist.

As for what was left out, one must question if the other apostles were literate or not, since the vast bulk of the Epistles were written by Paul. Did the other apostles not write anything? Were their writtings lost to the sands of time? Or was there a political reason why some of their letters were excluded, perhaps for example that they might have supported views of christianity that lent support to Gnostism or other heresies (or other politically incorrect ideas from the point of view of Constantine and the other early Christian Ceasars). Ultimately all these are ligitimate questions which are difficult if not impossible to answer. One must then fall back on faith.
